Almond Encrusted Salmon
If you are looking for a healthy, super easy and quick dish, here is your answer. This baked salmon is loaded with flavor and only takes about a half hour to make! I had almost forgotten about this recipe until my cousin reminded me of it recently. I fell in love all over again - definitely one of my favorite dishes to make. Thanks, Yoo! Keep in mind that you can use practically any kind of nut. I’ve made this salmon with pistachios and plain almonds in the past, but THIS time I went with wasabi and soy sauce flavored almonds. NOM!! What you need (for one serving):
Ready? This is so quick and easy. First, drizzle the fillet with lemon juice and season it with a dash of salt and pepper.
Let that sit for a hot second while you break down the nuts. Roughly smash them by applying pressure on them using the side of a large chopping knife.
You can keep breaking them down into smaller pieces with the side of the knife or you can toss the bits into a zip lock back and roll a wine bottle over them. A mortar and pestle does the job best. Blend the chopped nuts with the parmesan thoroughly and coat the top of your fillet with the mixture. Be generous! ;)
Place the fillet on a lightly greased pan to avoid sticking and bake for about 15 minutes or until how you like your salmon cooked. And that’s it! Told you it was quick and easy. I had my fillet with a salad of fresh baby greens, dried cranberries, candied walnuts, gorgonzola crumbles, and balsamic vinaigrette. I love the added texture the almonds give the otherwise plain fillet and that robust bite from the parmesan and wasabi is to die for.

It’s That Time of Year Again…
When there’s a chill in the air, what’s better to warm you up than some seasonal apple crisp? My kid sister requested this sweet treat for Thanksgiving dessert recently and it was a hit, as always. What you need:
Preheat your oven to 350 degrees. Peel, core, and slice your apples and place them in a large bowl.
Add the sugar (just half a cup) , cloves, cinnamon, and lemon juice to the apples and give it all a good toss to coat them evenly.
You’re done with the apple, now it’s time for the crisp. In a large bowl, blend the other half cup of sugar, flour, salt, and butter to a crumbly consistency. I first chop up the butter into small squares and then add the rest of the ingredients. As the dry ingredients coat the butter, I keep chopping up the butter into smaller pieces in the bowl with a small knife until the consistency looks something like this…
Now place the apples in a 1.5 quart casserole dish and cover them with the crumbly mixture.
Bake for about 45 minutes or until the apples are tender and the crisp is lightly browned.
Balance the heat with some vanilla ice cream and I promise you will be one happy camper. Plus the comforting fragrances of apples and cinnamon will be sure to put you in the holiday spirit. ^_^
